vada





Vada is a crispy snack made of Urad dal (Uzhunu vada in malayalam) and parippu vada made of Tuvar dal. The making of vada follows with soaking of dal for three hours and grinding it.
But other simple vadas too exists without soaking. Can be made with few ingredients in very less time. Its very easy and simple.
Cooked rice if found excessive. No need to be tensed you can prepare a crispy and yummy vada for evening tea snacks. This vada goes well with coconut or onion chutney. I prefer coconut chutney more.



The ingredients above pictured is

Cooked rice
6 tsp of rice flour
small piece of ginger
2 green chillies   
one medium sized onion (finely chopped)
little curry and coriander leaves
little black pepper (optional)

The other powder used are 1/4 tsp of turmeric powder, 1/4 tsp of chilly powder, two pinch of asafoetida powder and salt as required. Chilly powder can be increased or decreased as you prefer for spicy. And chilly and asafoetida powder is optional.

Take a mixie jar add the cooked rice. Pour little water. Water shouldn't exceed as the batter should be thick to get perfect vadas. Don't grind it very smoothly. Grind it with two time rotation. Transfer the grinded rice into a pan. Add the rice flour, mix it. Then add the other ingredients taken above. Add the powders too. Mix it well and be sure to make a thick batter. Keep it aside for half an hour.
Place a kadai on flame. Pour oil or coconut oil. When the oil 
is heated. Starting making vadas. Deep fry the vadas by turning it over. This crispy and hot vadas are very delicious to
be had with chutney.

COCONUT CHUTNEY




Ingredients for making coconut chutney

Grated coconut
Two green chillies
Small piece of ginger
two shallots
few curry leaves

Take a mixie jar. Add all the ingredients and grind it well to
make a smooth paste. Take a kadai. Add 1-2 tsp of coconut oil. Add coconut oil more as it enhances the taste of chutney. Add little mustard seed and one dry chilly when the coconut oil
is heated. Check it splutter properly. Then add curry leaves. Add it to the chutney and mix it well. Taste and add salt as per your sufficiency.
